Chicken Stuffed With Sauce

Stuffed boneless chicken is a very appetizing dish, especially during the end of the year parties. However, you can also  enjoy this delight without having to wait for Christmas.

In general it is a sophisticated dish and it will require some culinary skills. But, if you follow our advice,  you can prepare it efficiently.

Recipe for stuffed chicken with sauce

Ingredients

  • 1 boneless chicken
  • 50 g of black olives
  • 250 g of meat
  • ½ cup of nuts (50 g)
  • 100g bacon
  • 4 piquillo peppers
  • 1 leek
  • Flour
  • 1 cup of poultry broth (250 ml)
  • 4 apples
  • Butter
  • Sugar, salt and pepper
  • Thyme
  • Oil

Preparation of the stuffed chicken

  • To start, chop the meat into small pieces and sauté it in a little oil, just enough to seal in the juices.
  • Chop the bacon into squares and fry it for a few moments to release some of the fat, remove the extra fat and reserve in a separate container.
  • In a deep bowl, combine the sealed meat, bacon, black olives, halved and pitted, nuts, and julienned peppers.
  • Stir until all the ingredients are well integrated and correct the salt and pepper mixture.
  • Then heat the oven to 180 ºC.
  • Proceed to fill the chicken with your mixture. This is generally done through the back of the chicken. When you’re done, tie it up (tie the legs and wings so they are well attached to the body).
  • Place the chicken in a baking dish, bathe it with a drizzle of oil and sprinkle thyme on top. You can also add salt to it.
  • Take your chicken to the oven and let it cook for at least an hour.  The sweet spot is when the outside of the chicken is golden brown.
  • Keep in mind that you should bathe your chicken as it is baked with a little chicken broth (this can be done by dividing the broth into five batches, in 15-minute intervals. Reserve the fifth batch for the sauce).

Preparation of the sauce

  • Sauté a leek cut into squares in a little butter.
  • While it is cooking add two apples, peeled and cut into pieces the size of a dice, and let them sauté for a few minutes.
  • Then sprinkle them with a little flour and let them toast so that the raw or crunchy taste of the ingredients is not noticeable.
  • Once it has reached the desired texture, add the portion of broth that you have reserved and stir until it thickens. Then, remove the sauce from the pan and proceed to blend it. Save it to accompany the chicken later.
  • Now, if you want to prepare a garnish, peel the other two apples, dice them and fry them in a little butter until they are caramelized.
  • To facilitate this process add a tablespoon of sugar. When it’s ready, take the apple off the heat.
  • To finish, remove your chicken from the oven, free  the legs and wings, and serve on a large platter or poultry tray.
  • Accompany the dish with the apple sauce and with the garnish that you have prepared.

Additional tips

  • Boneless chickens are readily available in supermarkets and butchers. However, you can bone it yourself, if you have the skill.
  • If you wish, you can use ground beef for this preparation.
  • Another way to make this recipe is in rolls:
    • What you should do is take breast fillets and put the filling in the center, roll it up and take it to the oven.
    • Then follow the same procedure as with the boneless chicken.
