Ingredients (for 4 people)

  • 2 green apples (60 g).
  • Juice of ½ lemon (10 mL).
  • 2 large oranges (60 g).
  • 1 tablespoon of sugar (10 g).
  • 1 tablespoon of flour (10 g).
  • ½ cup of white wine (100 g).
  • 2 tablespoons of vinegar (20 g).
  • 4 fresh salmon fillets (300 g).
  • 2 tablespoons (soup) of butter (20 g).
  • Salt, pepper and Provencal herbs to taste for seasoning.
  • 2 tablespoons (soup) of extra virgin olive oil (20 g).

Preparation 

  1. To start the recipe for baked salmon with fruit, the salmon loins are marinated with salt, pepper and lemon juice.
  2. The loins should be reserved, while we prepare the orange sauce.
  3. For the sauce, we put the white wine, the vinegar, the orange juice and the sugar in a saucepan. Bring to a simmer until the volume is reduced by half.
  4. We add the flour previously dissolved in cold water, to mix the other ingredients of the sauce. When we achieve the thickness that we like the most, we will remove the sauce from the heat and reserve.
  5. We preheat the oven to 200ºC.
  6. After the first 5 minutes have elapsed, we place an empty mold in the oven to heat it up.
  7. While we wait for the mold to heat up, we cut the green apples into thin slices.
  8. While the mold is hot, we place the previously marinated salmon loins and cover with the green apple slices.
  9. Before taking to the oven, we sprinkle the preparation with orange sauce to prevent the preparation from drying out. But it is important to reserve half of the sauce to serve with the ready-made dish.
  10. We bake our salmon with fruit for 10 to 20 minutes, using only the oven grill. If our oven does not have a grill, we must put the mold high up so that the fire does not go directly into the salmon.
  11. When the doneness is to our liking, we remove the salmon from the oven.
  12. To serve our baked salmon with fruits, simply plate and add a touch of the orange sauce.]
