Homemade Chicken Dumplings

Ingredients:

For the dough of the dumplings:

  • 150 cm3 of water
  • 150 cm3 olive oil
  • 350 grams of common flour
  • 1 teaspoon salt

For the filling:

  • Half cooked, broiled or grilled chicken
  • 6 piquillo peppers
  • 1 can of stuffed olives
  • 3 eggs
  • Salt

The steps to follow are:

  • In a saucepan place the oil and water to heat, until it boils.
  • Mix the flour with the salt.
  • Pour the water and the oil into a container, wait two minutes and add the flour at once.
  • Mix well to form a compact dough, cool and refrigerate for about 30 minutes.
  • Meanwhile, prepare the filling for the dumplings. Cut the chicken into small pieces and boil the eggs with a little water (when it boils, leave for another 15 minutes).
  • Chop the olives and peppers very small.
  • In a frying pan, sauté the chicken, finely chopped eggs, olives and peppers with a little oil.
  • Take the dough out of the fridge and roll it out as much as possible.
  • Cut circles about 12 cm in diameter with a mold.
  • Place a tablespoon or two of the filling in one of the halves of each patty and wet the edges with water.
  • Fold in half to close them and flatten using a fork so that they do not open.
  • Fry in hot oil (not much because otherwise they burn). You can also make them in the oven.

    In this case, the filling will be more spicy because you will be using curry. It is also a very simple, low-cost recipe that is made in the oven.

    Ingredients:

    • 1 package of dough for empanadilla (or the necessary ingredients to make them yourself)
    • 250 grams of chicken meat minced
    • 1 onion
    • 1 teaspoon curry
    • ¼ teaspoon turmeric
    • Salt
    • 3 tablespoons Dijon mustard
    • 3 tablespoons of butter
    • 1 egg
    • 3 tablespoons of flour
    • milk

    Steps to follow:

    • Chop the onion and fry it in a frying pan with little oil.
    • Shred the chicken meat and season it.
    • Add to the pan with the onion until everything is done.
    • In a saucepan add the butter until it melts and pour the flour, stirring with a wooden spoon.
    • When it browns a little, pour in the previously heated milk, stir until there are no more lumps and get a creamy texture.
    • Add the seasonings and simmer for two minutes.
    • Pour this cream into the chicken onion filling and let everything cool.
    • Fill the dough with dumplings and after closing them, paint them with an egg.
    • Bake until golden brown on both sides.

    Ingredients:

    • Chicken leftovers from the previous meal (already cooked)
    • 12 empanadillas tapas
    • 4 tablespoons heavy cream
    • 1 tablespoon tomato
    • 1 egg

    The steps to follow:

    • Chop up your leftover chicken from dinner.
    • In a saucepan, heat the cream with the tomato and then add the chicken meat.
    • When it thickens, remove from the heat, let it cool and fill the empanadillas caps.
    • Bake until golden brown on both sides.
