Brunswick Chicken

The Brunswick chicken is a traditional stew of the southern United States. Its origin is uncertain, although it is believed that it may come from the city of Brunswick (Georgia), Brunswick County (Virginia) or Brunswick County (North Carolina).

Regardless of its origin, this stew consists of a tomato base that can contain: Lima beans, corn, okra and more vegetables and one or more types of meat. The recipes that claim to be the original contain squirrel or rabbit meat, although stews with chicken, pork and beef are also very common.

The chicken that we teach you to cook here is not exactly American stew (which by the way looks horrible), but an adaptation of an English recipe for Brunswick-style chicken thighs.

The mixture of flavors is at least original, and it is not typical to what we are used to, but precisely for that reason this dish is ideal to surprise friends and family with something new. In addition, it is delicious.

Option 1: Brunswick Chicken

Ingredients:

  • Chicken drumsticks.
  • Onions.
  • Red pepper.
  • Yellow pepper.
  • Corn.
  • Chopped peeled tomatoes.
  • Green beans.
  • Peppers.
  • Tabasco (optional).
  • Chicken broth tablet.
  • White wine.
  • Oil.
  • Salt.
  • Pepper.

Process:

  1. Put a large saucepan over the heat with a good stream of olive oil.
  2. Season the chicken and add it to the saucepan. Let it brown over medium heat for 10 to 15 minutes, until the pieces are well toasted on the outside. Remove from the saucepan and reserve.
  3. Chop the onion and peppers into small cubes and add them to the saucepan, over the same oil as the chicken and together with the beans.
  4. Cook over medium heat until the onion is soft and a little transparent. Add a teaspoon of paprika and mix everything well.
  5. Dissolve the chicken stock cube in a glass of hot water and add it along with the can of tomato.
  6. Season to taste.
  7. Also add a splash of white wine and if you want it to be a bit spicy, a few drops of Tabasco.
  8. Increase the heat and when it starts to boil, lower it to a minimum, add the chicken and cook with the heat at low for 20 or 30 minutes until the sauce reaches the desired thickness.
  9. When you have 5 minutes to go to be ready, add the drained can of corn and mix well.
  10. Serve hot.
